QUESTION & ANSWER

11/01/2005
What is pils and what is beer?

Question:I’m working on a school project on the brewing of beer. We had chosen a pilsener recipe because it’s a beer that’s easy to drink. But what exactly is the difference between beer and pils? What exactly does the tem pils mean? What does beer mean? What’s it all about?
Valesca

Answer:Beer is the generic name for beverages that make use of the brewing process with fermentation. “Pils” (lager) is the most produced sort (more than three quarters of world production). Pils is named after the town of Pilsen in the Czech Republic, where this type of blond beer was originally made.

What distinguishes pils from other types of beer is that it is a “bottom fermentation” beer”, which means that the fermentation occurs at a low temperature. “High fermentation”-type beers, typical for English beers, are brewed with the action of other kinds of yeast. In addition to these there are the beers with spontaneous fermentation, for which other ingredients are used. These include a good many typically Belgian beers such as Lambic, Geuze, Kriek, etc.
